Ingredients:
500 gms sweet almonds
35 gms bitter almonds
400 gms sugar
7 egg whites
grated lemon and orange peel
orange blossom water to taste.

Chop the almonds in a mixer together with the sugar until they form a homogeneous paste. Then beat the egg-whites (but not into a froth) and add to the almonds and sugar together with the grated lemon peel and mix until even. Allow to rest for at least 20 minutes. Work the mixture into large round balls similar to meatballs, wetting the hands with orange blossom water so that the mix does not stick to the hands while working. Lightly press the balls into the sugar and put an almond in the middle of each one, then place them well apart on a baking tray lined with greaseproof paper. Bake at 170 ° for about 20 minutes or until uniformly golden-brown. Remove from the oven and let cool before serving.
